Did you know that there are more than fifty different species of agave used for mezcal production in Mexico - each with its own unique character (like so many other delicious raw products that we ferment and drink)? Cuixe is a particularly rare variety, which tends to be quite small. In the glass it’s flinty with a great minerality, hints of smoke-dried grass and a subtle core of green apple.
