Founded by three friends in 1980, Azienda Agricola COS has grown to be one of the best-known producers in the Sicilian natural wine scene. Located in Vittoria, the southeastern corner of the famous volcanic isle, COS is founded on the belief that organic and biodynamic viticulture hold the key to harnessing Sicily's unique terroir.

Taking inspiration from ancient winemaking methods, COS employs large terracotta amphorae buried in the ground to ferment and mature their wines and utilise skin maceration for their white wines.
