Founded by three friends in 1980, Azienda Agricola COS has grown to be one of the best-known producers in the Sicilian natural wine scene. Located in Vittoria, the southeastern corner of the famous volcanic isle, COS is founded on the belief that organic and biodynamic viticulture hold the key to harnessing Sicily's unique terroir. Taking inspiration from ancient winemaking methods, COS employs large terracotta amphorae buried in the ground to ferment and mature their wines and utilise skin maceration for their white wines. Raw, wild, and always captivating, the wines of COS are an exceptional entry point to discover the wines of this enchanting island.

Known elsewhere in Italy as Moscato d'Alessandria, COS's Zibibbo fruit comes from organically-farmed vineyards in Marsala in the west of Sicily, grown next to the Mediterranean on sandy limestone soils. It underwent a lengthy fermentation on skins in terracotta amphorae, before spending a further six months maturation in clay. High toned varietal aromatics make themselves known, leading into a balanced palate showing savoury spice, honeyed stonefruit, and citrus with fresh acidity and gentle tannins. Complex yet effortlessly drinkable.
