Named after the magnesium limestone rich soils of the area, the Les Dolomies domain was created by Céline Gormally back in 2008.
Using biodynamic principles, manual farming with livestock, fermentation with indigenous yeasts, and very little sulphur (if any) - the Les Dolomies cuvées are wonderful expressions of each parcel. Les Boutonniers is 100% Chardonnay, coming from low-yielding 65-year-old vines. Concentrated and quite reductive upon first opening, this will benefit for a splash in a decanter before tucking in. White stone fruit notes, pine resin, white pepper spice and delicate florals with shimmering acidity.
