Yeast is at the heart of every beer, and its selection and handling play a huge role in the success of crafting a magnificent beverage. Yeast can not only change the flavour profile but it can change the mouthfeel, the carbonation, the foam and even the colour of the beer. Molly Rose has made a wort with some stunning Voyager malt and split it down the middle in two of a dish bottom fermenter (which keeps yeast happy). This was pitched with a malt forward lager yeast to make a Bock-style beer and the second a classic Belgian Trappist yeast which will make a dubbel-style beer. Molly Rose Adorned Belgian Dubbel

This is one of our favourite times of year because we just LOVE Dark Lager. This one's loaded with roasty, malt-forward notes alongside bready malt and rounded bitterness. (500ml) 5.2% ABV

Der Hirchbräu Holzar-Bier

Brewed with a base of Pilsner malt along with additions of specialty malts like chocolate and Eclipse wheat. The kind of roasty chocolate notes you might expect from a stout sit-up front here before being cleaned up at the back end with a refreshing Lager finish. (440ml) 5.2% ABV

Shapeshifter Make Your Move Dark Lager

Originating in the Bavarian capital, Munich, this style of lager found its origins in the beers brewed by monks. Rich, bread and coffee-like flavours fill this fuller style, with a higher ABV to match. (330ml) 6.7% ABV

Ayinger Celebrator Doppelbock

When you're not sure if you want a pale ale or a porter, this brew sits perfectly in the middle! Full of toffee malts, this has stone fruity hops, alongside a velvety mouth feel and a light, lingering bitterness. 4.5% ABV 355ml

Wolf of the Willows Amber The Woodsman Ale

Another belter from Ayinger is this malt-driven Dark Lager. In the glass, notes of toasty malt and coffee greet you with some lightly hopped character peeking through. (500ml) 5.0% ABV

At the end of a long day, there’s nothing quite like a good beer. Since the recent explosion of the craft beer scene, we’ve had our eyes opened to the extensive reach of the amber brew—hell, sometimes it’s a different colour completely! If you're after hops galore, how about an IPA, or a slightly more subdued pale ale? We’re big fans of a malty backbone in our beers, and even reach for a roasty, toasty stout in the cooler months.
