Jayden Ong – a siren that ushers flavour, dare and skill. 2022 in the Moonlit Forest is all about amaro edges, redcurrant and blood orange juiciness. There’s a good amount of bitter snap too – sounds like a little bit of the maker’s charm went into the wine.

A delicious blend of Fiano that saw four days on skins and whole bunch-pressed Pecorino has resulted in what can only be described as golden hour in a bottle. In the glass, expect floral jasmine and acacia alongside golden orchard fruits, touches of ripe pear and a luscious texture. A perfect match with prosciutto-wrapped melon, spicy Southeast Asian dishes or just a friend at sunset.

A collaboration between I’ll Fly Away and NSW fashion brand, High Tea with Mrs Woo. This has a great savoury edge and some oxidative spice for all you Jura fans out there, but all the stonefruit and a little pulled brioche note keeps things inviting, very lovely and a step up in the Pet Nat game.

This year the fruit is from the Coal River and we are loving it! Tensile and freshly fruited with just enough oak. There’s texture to make all the white peach and nectarine feel almost visible, and it’s all smooth thanks to some driven vanilla cream notes.

Sangiovese with a couple of friends, Colorino and Canaiolo, who seemed to show up as soon as the water started boiling and the amount of pasta needed to be calculated. The three combine for amaro and blood orange juice running over terracotta with enough bright acidity to get through the host’s famous ragu.
