Hubert Soreau produces tiny amounts of highly coveted wines.
From a parcel of old chardonnay vines located on the border of Epernay and the Côtes des Blancs, vinified and aged in neutral 300L barrels harvested from the nearby Hautvillers forest. Perfectly rich and layered, with ripe fruit, brioche and hints of sea spray. Spending six years aging sur-latte (on their lees) before disgorgement and with minimal dosage.
