A wonderful introduction to the wines of Sylvain Pataille.
The only blended Aligoté in the lineup, half the fruit is harvested from old vines in Marsannay, with the remainder coming from Échevronne in Hautes Côtes. Energetic with plenty of depth from the old vines, with a delightfully refreshing saline finish. The wine was matured in old foudre and sent back to stainless tanks for a short rest before bottling.
