Sitting amongst a wonderfully picturesque Australian setting, Shay's Flat Vineyard is right at the heart of the Pyrenees.
This keeps its cards close to its chest, but with some time in the glass shows a palate of dark berries and cherry fruit, with fine layered tannins and an alluring graphite complexity. The second to ripen of the three Cabernet Sauvignon sites, the fruit was harvested by hand, partially foot crushed and open fermented for three weeks, before elevage in a mix of new Stockinger and seasoned Bordeaux barriques for 12 months.
Allow this to unwind in a decanter and it will show its layers of complexity, or if you can bear to wait, cellaring will reveal more nuance and complexity with time.
