A new project from Shaw + Smith focused on single varietals in the context of Blewitt Springs.
Chenin Blanc from MMAD's youngest vines, with tension and a Chablis-esque maritime quality. Chiselled and restrained, with apple, saline, lovely blossoms and a flinty mineral edge. A portion of this wine was fermented in concrete, with another parcel whole bunch pressed for texture. For those familiar with Chenin in its Loire surrounds - think Savennières for a stylistic cue!
