A new project for the Dhillon clan made in the signature Bindi-style, wild-fermented in a third new oak and aged for ten months on lees. The result is a bright expression of Chardonnay that brings together citrus, florals, and stone fruit with meal and a subtle creaminess. This will only gain texture and intriguing complexity with time, so it's a good one to put in your cellar and dust off in five years or so.
