A stunning example of the sum being greater than its parts, Marco had slated the fruit for two single-terroir wines, ultimately deciding the wine tasted best as a blend.
The Derwent portion was 100% whole bunch fermented using only light foot plunges. The weather wasn't as kind to the Huon fruits, instead, this portion was destemmed and sorted, leaving only the best fruit for whole-berry fermentation. The resulting wine is a celebration of the softness and elegance of Huon fruit and the structure and spice of the Derwent. It's approachable now with a good decant, but will reward you greatly if you can bear to wait.
