Entropy's Ryan Ponsford prides himself on working in the pursuit of elegance and this outstanding blend of Savagnin and Pinot Gris certainly shows it.
Sourced from the Willowgrove vineyard in Gippsland, this is savoury upfront with mealy and hay-like aromas setting the scene for the beautifully textural palate that simply demands food. Red apple, plenty of phenolic drive and some lees chalkiness, with pumice stone-like minerality.
