Scintilla Flo's Pink Fizz Pét-Nat 2022

It’s the perfect wine to see you through warm days and long summer nights. Pinot Gris comes from Robert Surmann’s vineyard in Totness. Fruit is destemmed and left to rest for four days before being pressed into a ceramic egg and fermented for two weeks. It finishes on lees in the bottle for five months and then disgorged.

Taka is a former Japanese sommelier who has been spending plenty of time in the Adelaide Hills working alongside such fine folk as the Belton family, who are the great minds behind Gentle Folk.
