The nose is nice and waxy, and full of apples and pears, maybe even a locally grown brown nashi. We love Savagnin, just can’t seem to get enough. Enjoy, well it's still in our fridge.

There's plenty to unpack here, start with the wonderful Jurassique grape variety Savagnin; add some oxidative handling and the outcome is a rich and nutty expression, with golden apple, a little brioche, and some dried pear that is electrified by a jolt of freshening acidity.

Defialy Pale Blue Eyes Savignin 2022

This lets you know it's Savagnin from the minute its aromas hit your nose—white stone fruit notes and some almond blossom from its time in new stockinger set the scene for this cuvée from Phoebe Grant. There's a nice, easy flow to this with a darting line of preserved citrus through some ginger spice and phenolic richness from its three days on skins.

Entropy Savagnin 2021

Made from only six rows of Savagnin in the Yarra Valley's Rising Vineyard, which was planted as a trial in 2000 under the false assumption that they were Albariño cuttings. It's textural and concentrated, with varietal pineapple and stonefruit notes leading into a little oxidative salinity and a hint of lime leaf.

Arfion Kenzie Savagnin 2019

Well, this Savagnin is not shying away from it's oxidative handling, having spent 14 months under flor. Ripe pineapple, crushed makrut lime leaves and some salty ocean spray notes and scintillating acidity. Pair with a chunk of good Comté for maximum effect.

Municipal Flor Savagnin 2020

A lovely build of lemon curd like texture that is greeted a zippy acidity and a like sprinkle of lemon sherbet. Yummy wine.
