Owen used a continuous fermentation technique, adding to the ferment as each parcel ripened—and the resulting wine is a wild ride. A delicious blend of Sauvignon Blanc, Chardonnay, Pinot Gris, Pinot Noir Rosé and a splash of Viognier and Gewürztraminer. Zesty tangerine, some spice and floral, with an oxidative edge keeping things in order. Buckle up!

Latta Precarious Bianco O2 2021

This skinsy number comes from three growers in the region for added texture and layers, with each batch fermenting on skins for four weeks in oak, concrete and ceramic before bottling. Floral rose water on the nose leads to a lovely grip on the palate with a mineral drive.

So when our old mate Josh Cooper found himself tasting through incoming fruit he made the decision to saignee (or bleed) some of the just fermenting juice off and make a truly delicious rose. This wasn't just any fruit mind you... It is Josh's long term growers Tristia and John Lakey who look after their Ray-Monde vineyard located on their mixed and regeneratively farmed property in Sunbury. Used well, the saignee technique is a win-win type deal as far as we're concerned... Josh slightly concentrates and builds depth in the ferments for his Ray-Monde pinot noir and we get a compelling, autumnal and thirst-quenching rose! Think poached forest berries, a shovel of turned earth for savoury tone and a pinch of tannin nestled in late to close out the wine. It's a compelling drink that in normal Josh Cooper style will have you reaching for thought-provoking adjectives as much as it will encourage you to use the next glass to wash down some sort of snacky cured vegetable or meat. Or better yet if you want to totally complete the 'when it grows together it goes together' loop try a bottle with Tristia and John's mildly spicy Merguez sausages.

Joshua Cooper Spring Rosé 2021

This Chardonnay shows lovely restraint and a well-rounded ripeness. There's fresh grapefruit and just a lick of white nectarine, with creamy cashew oak. A delicate long line of acidity will keep this one playing on your mind long after you've finished the glass.

Old-school beer with a new-school ethos (and lots of deliciousness to boot). Smooth and dark with chocolate, coffee, and a refreshing bitter finish. (375ml) 4.5% ABV

Philter Old Ale

A beguiling mix of tropical Savvy B with stone fruit on the nose. Lots of fleshy white pear and lemon pith, fresh acidity, a little sourdough and salty grip. Easy drinking.

Brave New Wine Riot Girl ! Pinot Gris Viognier SB Vermentino Gewurtz 2021

Take a walk on the richer side of Sauvignon Blanc, courtesy of everyone's favourite jewellery valuer-turned-winemaker, Michael Hall. The fruit was barrel fermented (5% on skins) and matured in barrel on lees for nine months to build texture and tame some of the high-octane aromatics that this variety is famous for. The result is a powerful, concentrated style of Sauvignon Blanc with smoky aromatics and notes of dried honey, citrus and spice. A gentle clench of tannin from the skin contact component of this wine adds some savoury texture, making this a fantastic food wine.
