Just like its namesake, this is a carefree and delicious saison that's a perfect beer to have with lunch. After an initial fermentation with a Saison yeast, it was then dry-hopped with Saaz & Strisselspalt hops before adding a dollop of everyone's favourite farmhouse yeast, Brettanomyces, immediately prior to bottling. It's crisp and extremely refreshing, with delicate flavours of lemon peel, peach, white pepper, and biscuit. (750ml) 3.3% ABV

A blend of barrel-fermented saison that was aged on raw pu-erh tea. Puer (or pu-erh) is a style of tea produced in Yunnan China. There are notes of nectarine on the nose along with a lovely herbaceous tea leaf element. Citrus drive, earthy and spicy. (750ml) 5.4% ABV

A blend of their Farmhouse beers was left in barrels with raspberries before being blended with a Saison that was fermented with even more raspberries. The result is, unsurprisingly, loaded with fresh raspberry character with notes of summer fruit, soft mellow saison character and a bright zippy character. (750ml) 5.4% ABV

Inspired by the provision beers that were originally born out of a need for sustenance and hydration during the 18th century in Western Europe. Comin’ in at only 3.4% ABV, this is straight-up refreshment, citrusy and flavourful, and such a treat to drink. (750ml) 3.4% ABV

Wytchmaker is a Rye IPA with a farmhouse twist. It's fresh and complex, with the perfect balance of piney hop characters and spicy funk.

Made back in June 2021, this is mashed with pale malted barley, hopped with noble varieties, and as is the hallmark of Fantôme, spiced with a selection of delicious adds. One of those was Old Man Saltbush leaves, harvested from Sam and Chris Greenwood's farm in Coleambally, where Wildflower sources its barley. The resulting beer is endlessly drinkable and brings Australian native flavours to a classic Belgian beer. This is one for Wildflower's history books! (750ml) 7.0% ABV

Wildflower x Brasserie Fantôme Fantôme d'Or

The 2021 version of St Henry (named after co-founder Chris & his wife’s second son), takes Wildflower’s Gold wild ale and referments it with just over a tonne of fresh, whole tree-ripened Robada apricots from Yarralee Orchard in Kelso, NSW. The end result is a complex, spice-laden ale with creamy vanilla notes and a citrusy funk. (1.5L) 5.7% ABV

La Sirène Single Barrel Collection 064 Barrel-Aged Sour Ale

This was brewed with organic grains and passed over Meyer lemons before being fermented with Wildflower's house culture of microflora—wholly foraged from native flowers in NSW. After the primary ferment, the Wildflower crew blended the beer with the juice and pith of oranges, the result is a beer with big citrus notes upfront of savoury marmalade and hints of limoncello. It's light, clean and zippy with hints of both clove spice and bitterness.

At the end of a long day, there’s nothing quite like a good beer. Since the recent explosion of the craft beer scene, we’ve had our eyes opened to the extensive reach of the amber brew—hell, sometimes it’s a different colour completely! If you're after hops galore, how about an IPA, or a slightly more subdued pale ale? We’re big fans of a malty backbone in our beers, and even reach for a roasty, toasty stout in the cooler months. If you’re here to experiment, mixed-fermentation beers open a whole new world of flavour, while a kettle sour is sure to do the trick on a sunny afternoon.
