Bonnet-Huteau Dabinières Muscadet Sèvre et Maine 2020

Take a walk on the richer side of Sauvignon Blanc, courtesy of everyone's favourite jewellery valuer-turned-winemaker, Michael Hall. The fruit was barrel fermented (5% on skins) and matured in barrel on lees for nine months to build texture and tame some of the high-octane aromatics that this variety is famous for. The result is a powerful, concentrated style of Sauvignon Blanc with smoky aromatics and notes of dried honey, citrus and spice. A gentle clench of tannin from the skin contact component of this wine adds some savoury texture, making this a fantastic food wine.

We made a thoughtful selection of subregional character when considering the wines we wanted to share with you. In McLaren Vale, the sandy soils of the vineyard work well to highlight the aromatics of the Grenache. Wild strawberry and dried rose petal aromatics pave the way for ripe raspberry, a hint of blackberry and light salinity. There’s also a touch of that ironstone character, which comes from the ironstone clay present in the soils. This Chardonnay is beautifully soft and textural. A broad spectrum of fruit flavour reflects the site, with white stone fruit, nashi pear, fennel fronds, and subtle oak spice present. Our Mornington Peninsula wines were grown bayside, where the vineyards are warmer and better protected than along the coast. The resulting wines boast generous flavours and more richness. This bottle is a fantastic example of Pinot Noir from this region. This wine offers a complexity of fruit aromas; rich maraschino cherries, sweet spice, plum, hints of Cherry Ripe, and earthy tannins. We acknowledge the Traditional Owners of the lands on which we live and work and pay our respects to their Elders past and present. Grown and made on the traditional lands of the Boon Wurrung / Bunurong people of the Kulin Nation.

Easy-going with a wash of cherry, blackcurrant, a gentle savoury character, and a hint of dusty chalky tannins.

Pasqua Sangiovese 2019

A delightful blend of Barbera and Nebbiolo, which is fruit-forward enough to qualify as couch wine yet with enough structure and savouriness to be food-friendly. Pouring a dark terracotta colour, with a palate of ripe cherry, aniseed, and dried herbs courtesy of the Barbera. The Nebbiolo component kicks into gear soon after, providing a little smokiness and lick of tannin.
